Warm Winter Quinoa Salad

This is definitely one of those deliciously sweet, salty and hearty salads that leaves you feeling fulfilled at dinner time. Heavy on key antioxidants, this salad will have you feeling like you have well and truly been hit with your daily dose of vitality and beautifying nutrients.

Warm Quinoa Salad

Ingredients

3 cups white quinoa
1 bunch kale
3 radishes
3 tbs lemon juice
3 tbs extra virgin olive oil
1 tbs apple cider vinegar
1 drop lemon essential oil
4 tbs chopped macadamia nuts
4 tbs dried cranberries
1 tsp sea salt
1 tsp cracked pepper

 

Making it yourself

Wash and cook the quinoa as per instructions on the packet. Place the finely chopped kale and radishes in a large bowl. Add lemon juice, vinegar, olive oil and salt. Massage into the veggies and allow the mixture to sit for a few minutes while you assemble the additional salad materials. Add in the warm quinoa, chopped macadamia nuts, and dried cranberries and thoroughly combine. Top with either a poached egg, sliced avocado, grilled tofu or perhaps some grilled goats or sheep’s cheese.
