Hocus Pocus!

This magical wintertime curry creation is the kind of dish that you can actually feel nourishing every cell in your body with every mouthful you take! One of the warming spice blends used in this dish, garam masala, is renowned throughout India for its circulatory, blood cleansing and digestive benefits. As more and more people start turning to nutrition for help with various health ailments, many of the South East Asian ingredients below are becoming really popular in the marketplace and with good reason!

Ingredients:Hocuc Pocus Winter Curry

2 cans borlotti beans
1 can diced tomatoes
1 cup tomato paste
2 cups water
1 cup sliced mushrooms
2 cups baby spinach leaves
1 sliced white onion
1 cup frozen peas
1 tblsp crushed garlic
1 tblsp minced ginger
1 cup raisins
3 tblsp tamari soy sauce
1 tblsp garam masala powder
1 tblsp curry powder
1 tsp sea salt
1 tsp ground black pepper

 

To make:

In a large fry pan (or deep saucepan), start by gently frying the onion, garlic and ginger. Now add in the remaining ingredients, reduce the heat and allow the curry to literally work its magic and simmer for around one hour.

Serve this enchanted curry in a traditional clay pot or tagine and place in the centre of the dining table along with garam masala yoghurt, a big bowl of brown rice and sweet potato mash garnished with fresh herbs and a sprinkle of turmeric powder. Deck out your kitchen table with colourful placemats, confetti and tea light candles. It’s also a really cool idea to place a few little ceramic bowls on the table and fill them with various culinary goods like cardamon pods, star anise, ginger root and cinnamon sticks to reinforces the fresh, wholefood vibe and help generate an appreciation for nature’s gifts!
