Message from Sal - the story behind the cafe
When I was presented with the opportunity to open a cafe I went into a mental and sensory overload. I have always loved food. I love to cook. I have an Italian heritage. Italians love their food, they love to share it with friends and family. I also love Japanese food and I know that Japanese people love and enjoy their food.
I am very excited to share my passion for food and passion for holistic wellbeing through the food that we offer in our café. It is not surprising that Perfect Potion's first ever cafe opens in Japan. The Japanese people have a great passion for beautiful and delicious food. Japanese people have an awareness of the seasons and eating and prepare food that is in harmony with the seasons.
I was naturally attracted to the principles of Ayurveda in preparing our simple healthy and delicious lunch menu. In Ayurveda, food is selected and prepared according to its energy and in accordance with the seasons. While Ayurveda's origins are from India and many of the ingredients and spices we use are from India, it is not as rich, spicy and hot as traditional Indian food. It is more delicate - the spices are selected to subtly balance the doshas and not to cause imbalance in your dosha.
In Ayurvedic philosophy, the vital force of nature - prana, manifests in the form of the five elements - earth, water, fire, air and ether. Any imbalance of these elements in our body is experienced as illness, discomfort or pain.
These elements are kept in harmony through breath, food, water, sunshine, exercise and sleep. The energy of the five elements combines to form Dosha - Vata, Pitta and Kapha. This energy manifests in all food and the principles of Ayurveda are to eat food to balance our constitution and dosha.
Perfect Potion is committed to using the finest natural and certified organic ingredients in all our body care and skin care products. The same principles apply to the food that we prepare in our café. We have sourced vegetables that are either organically grown or locally produced. We believe that selecting locally grown and organically grown produce is better for the environment, better for our local community and better for our health. The only ingredients we use that are from overseas are some of the exotic spices that give Ayurvedic food its unique aromas and taste.
We trialled the food with some customers (please see photos below) and the feedback was great. There are so many delicious cafes and restaurants in Kyoto so we have carefully considered the menu and the theme of the cafe.
The food in our cafe is prepared using the principles of Ayurveda. Customers can choose various combinations of spices and herbs to add to their dish to balance their dosha. Our delicious lunch menu offers salad, tridoshic dal, detox soup, wholemeal bread rolls, and rosewater couscous dessert.
